On Sundays I usually aim to do my meal prep for the week which sets me up for success. If you are someone that likes to be prepared for the week, you may want to try this simple apple and oat breakfast muffin recipe.
What is so healthy about this recipe?
- The main ingredient of this recipe is rolled oats. Oats are a great source of carbohydrates, which gives you energy throughout the day.
- This recipe uses honey instead of sugar for a natural sweetener.
- I added linseed to the muffins which is a great source of fibre and omega 3 6 and 9. Omega 3, 6 and 9. How to make Apple + Oat Breakfast Muffins?
This recipe is so quick and easy to make that you can easily make a batch whilst cooking dinner or doing your weekend meal prep.
Here’s what you’ll need:
1 Mixing Bowl
1 Spatula
1 Muffin Tray (this recipe makes approx. 9)
Baking paper to line each muffin pan
Preheated oven 180 degrees Celcius
Ingredients:
- 1 cup Standard rolled oats (whole)
- 1 cup Oatmeal (simply make this by blending oats in ninja blender)
- 3 whole egg
- 1/2 Cup of milk of choice (I used fat free lactose free milk)
- 1/2 Cup of self raising flour
- 2 Cubed apples (I used pink lady)
- 1 Handful of Sultanas
- 1 Tablespoon of linseed
- 1 Tablespoon of cinnamon
- Honey to taste
Method:
- Add all dry ingredients to a bowl
- Mix in wet ingredients
- Gently fold mixture together with wooden spoon (don’t overmix)
- Scoop into lined muffin pans
- Bake on 180 degrees C in pre heated oven for approx 15 mins till golden brown
