This simple CupCookie Balls recipe is a mix between cupcakes, cookies and energy balls. It’s my own recipe adapted from several other recipes such as Protein Cookies and Energy Balls. This is a healthy energy bite that you can eat when you are on a clean diet. Obviously you can make your own choice of ingredients. So let’s have a look at what you’ll need:
CupCookie Balls Ingredients
- 1 cup of Rolled Oats
- 1 1/2 cups of coconut flour (or any other flour that can be eaten raw)
- Handful of dried fruit such as cranberries and raisins
- Handful of nuts of your liking (I used toasted almonds)
- 3 large eggs (I used 2 whole eggs, 1 egg white)
- Tablespoon of honey
- Tablespoon of peanut butter
CupCookie Balls Method
- Mix all dry ingredients in a bowl (flour, oats, dried fruit, nuts)
- Add honey, peanut butter, and eggs
- Mix all ingredients together with a mixer (please note that the mixture should be thick, not runny)
- Roll mixture into balls (I baked mine in a muffin tray)
- Bake on 190 degrees Celsius until golden
- Enjoy this treat as healthy snack or to kick start your day!
