- 2 large portobello mushrooms (You can gently peel off the skin and you’ll have beautiful white mushrooms like on the photo below)

- 1 can of tuna
- some fresh vegetables for the stuffing such as cucumber, capsicum and tomatoes
- fresh basil

Chop all vegetables and herbs and mix them in a bowl. Shallow fry your mushrooms in coconut or olive oil until slightly brown (don’t fry too long as the mushroom cup wil turn too soft)

Assemble the stuffed mushrooms by simply filling the mushroom cups with the filling that you just created. Top with tuna and tadaaa!!!
