Its supply of vitamin E, iron and folate may strengthen your immunity as well.Pumpkins’ high vitamin A, lutein and zeaxanthin contents may protect your eyes against sight loss, which becomes more common with age.

How to Make Colourful Spring Tart with Teriyaki Chicken

What you’ll need

*Baking tray can be a standard solid baking tray like this “Rectangular heavy duty non-stick sheet oven tray” or if you like making cookies or crispy things like this tart, this “Perforated Rectangular heavy duty non-stick sheet baking tray“ is great!

Ingredients

  • 2 sheets low fat puff pastry
  • 1 handful of purple cabbage (chopped)
  • 2 big handfuls of fresh spinach leaves
  • 200 grams cooked chicken breast (or shredded chicken)
  • 100 grams butternut pumpkin

Method

Step 1: Prep the pastry. Place 1 sheet of pastry on baking paper on baking tray. Slice remaining sheet of pastry into 4 and line these up on the corners of the sheet on the tray Fold edges over to make them stand up.
Step 2: Bake the base for approx. 10 mins on 180 degrees C till golden brown.
Step 3: Top cooked pastry with drained spinach leaves and distribute evenly.
Step 4: Top with shredded red cabbage. Then top with pumpkin cubes.
Step 5: Top with thinly sliced chicken. Enjoy.

This colourful and yummy recipe makes a perfect light dinner and if you’re lucky you’ll even have leftovers for tomorrow’s lunch.

Ingredients

  • 2 sheets low fat puff pastry

  • 1 handful of purple cabbage (chopped)

  • 2 big handfuls of spinach leaves

  • 200 grams cooked chicken breast (or shredded chicken)

  • 100 grams butternut pumpkin

Directions

  • Prepare the base
  • Preheat oven to 180 degrees C and line baking tray with baking paper.
  • Place 1 sheet of low fat puff pastry on baking tray.
  • Slice remaining sheet of pastry into 4 and line these up on the corners of the sheet on the tray.
  • Fold edges over to make them stand up.
  • Bake the base on 180 degrees C for approx. 10 mins till golden brown.
  • Prepare the tart with toppings
  • Marinate chicken in your home made teriyaki sauce and pan fry till golden brown. Chop into thin slices. Set aside.
  • Dice pumpkin into cubes and cook in boiling water till almost soft (make sure pumpkin is still firm and doesn’t fall apart).
  • Prep spinach (cook in shallow water till done) and squeeze water out with your hands to remove as much liquid as possible.
  • If needed, you can flatten the cooked pastry base with a fork. Then top with cooked spinach leaves and distribute evenly.
  • Sprinkle thinly sliced cabbage over the tart.
  • Now top the tart with a few pieces of diced cooked pumpkin.
  • Top with sliced cooked chicken.
  • You can reheat the entire tart for a few minutes in the oven, or you can eat it right away!

Notes

  • If you like you can top this recipe with fresh herbs such as parsley or coriander.
  • If you like you can top with a dressing such as sweet chilli sauce, or with light sour cream.
