The other day I made some delicious Salmon, Coconut & Lemongrass Parcels in the oven and when I had some leftover coconut milk, I did a quick google search to find a purpose for my leftovers.
So one of the first things that came up was this super simple recipe for Dairy Free Coconut Pancakes. So to make it fit my macros, I added a bit of protein powder to this recipe. Here’ s how to make yours!
What’s so healthy about this recipe?
- This recipe does not use dairy, instead it uses Light Coconut Milk
- This recipe uses coconut oil to give the pancakes that moisture
Ingredients
For the Pancake Batter:
- 1/4 cup self raising flour (or coconut flour)
- Pinch of salt
- 1/3 cup light coconut milk
- 1 serve of vanilla protein powder (also see What protein powder to choose)
- 1 tablespoon coconut oil (melted) + more for greasing the skillet
- 2 whole eggs, beaten
- 2 tablespoons sugar free maple syrup
- 1/2 teaspoon pure vanilla extract
For Topping (Optional):
- 1 cup fresh berries or fruit
- 4 tablespoons sugar free maple syrup
Method
- Mix all ingredients (except toppings) together in a bowl, mix with hand mixer till combined
- Heat small skillet
- Make pancakes (pour 1 soup ladle of batter at a time into skillet to make the same sized pancakes)
- When bubbles appear at the top you know it’s time to flip the pancake over.
- Serve immediately topped with berries and maple syrup
