Dairy Free Coconut Protein Pancakes

The other day I made some delicious Salmon, Coconut & Lemongrass Parcels in the oven and when I had some leftover coconut milk, I did a quick google search to find a purpose for my leftovers.

So one of the first things that came up was this super simple recipe for Dairy Free Coconut Pancakes. So to make it fit my macros, I added a bit of protein powder to this recipe. Here’ s how to make yours!

What’s so healthy about this recipe?

  • This recipe does not use dairy, instead it uses Light Coconut Milk
  • This recipe uses coconut oil to give the pancakes that moisture
