Dinner Made Easy With These Teriyaki Chicken Lettuce Wraps

After a long day at work I really wanted to cook something healthy but not spend my entire evening cooking dinner… I had no idea what to cook but a quick search online gave me this idea: Chicken Stir Fry served in Lettuce Wraps.

How To Make Teriyaki Chicken Lettuce Wraps

What You’ll Need:

Ingredients

  • 1 Chicken Breast cubed

  • 2 Small Capsicums sliced

  • 1/2 Onion cubed

  • 2 Handfuls of sliced carrot

  • 1 Dash of Teriyaki Sauce

  • 1 Handful Crushed Cashews

  • 1 Large cos lettuce

  • Optional top with fresh herbs such as coriander or sliced fresh spring onion

Method:

  1. Chop stem off lettuce and wash leaves thoroughly. Set aside.
  2. Brown onion in wok pan.
  3. Add cubed chicken and fry till brown.
  4. Drizzle a dash of teriyaki sauce.
  5. Add sliced capsicum and toss around the wok.
  6. Add sliced carrot and toss around (save a bit of carrot to dress the wraps).
  7. Add crushed cashews and toss around (save a bit of cashes to dress the wraps).
  8. Scoop mixture into lettuce cups and top with some carrot and cashews to serve.

This simple stir fry recipe is served in cos lettuce cups for a healthy quick and simple light dinner option.

Ingredients

  • 1 Chicken breast cubed

  • 2 Small Capsicums sliced

  • 2 Handfuls of sliced carrot (save time and buy pre sliced from supermarket)

  • 1 Dash of teriyaki sauce

  • 1 Handful of crushed cashew nuts

  • 1 Big cos lettuce

Directions

  • Chop stem off lettuce and wash leaves thoroughly to remove sand. Set aside.
  • Brown chopped onion in wok pan.
  • Add cubed chicken and fry till brown.
  • Drizzle a dash of teriyaki sauce into chicken and onion mixture
