Today I´d like to share with you one of my favourite recipes: Carrot Soup. As you probably know, I love yummy food, cooking and a healthy lifestyle so I have combined these into a beautiful easy recipe that will make you feel better and healthier instantly.
Carrots are rich in vitamin A, dietary fibre, antioxidants and minerals. As a child, my granddad always used to tell me that ´you will get beautiful eyes´ if you eat enough carrots. At that time I only thought that it might make the colour of your eye (iris) more beautiful. Being a grown up, now I know that carrots actually ARE good for you, a lack of vitamin A can cause poor vision, however you will off course never be able to change the colour of your iris!
Besides the fact that carrots are good for your body, making this soup also is a way of relaxing as while you cook, you can clear your mind. Cooking empties your brain and makes you focus on only one thing, the soup (or any other dish you are making). Another great thing about this soup is that you make it yourself, so you know what is in it. No added MSG, artificial colours or hormones, just carrots, just soup, just yummy! So all you kitchen princesses, clear your mind and nourish your body with this healthy soup!!
So here it is, my easy carrot soup recipe! All you need is the below, 1 frying pan, 1 pot, and a blender.

- 1 kg carrots
- 1 Capsicum (optional)
- 1 Onion (red or brown)
- 4-5 gloves of garlic
- 1 Litre Stock (liquid or in cubes)
- Chop up garlic, onions, carrots (skin off) and capsicum
- Fry off garlic and onion in the frying pan and once browned, transfer into the pot with 2 cups of water and let simmer on low heat
- Then fry off carrots and capsicum in batches so that veggies have enough time to brown, then transfer the batch into the pot and add some more water
- Once finished with all veggies, add stock (or hot water with stock cubes) to the pot and simmer on a low heat for a few hours (until soft)
- Turn off the heat and let the pot cool down a bit so that you wont burn your blender or hands when blending
- In batches, poor soup mixture into the blender and blend until smooth, transfer into another clean pot
- Once all smooth, taste and season with (no salt as the stock is usually salty enough) pepper, italian herbs, chili powder or sweet chilli sauce (I always make my soup very spicy but not all of you like that so season to taste)
- This is a healthy soup, we do NOT add cream!!! 😉
