Healthy Salmon Sweet Potato Patties

I am a big fan of salmon and sweet potato both for their taste as well as nutritional composition.

However getting all the right nutrients daily isn’t always easy with work, gym and social commitments.

My goal is to do a weekly meal prep on the weekend so that I’ve got enough healthy meals for the rest of the week.

How I Do My Meal Prep

My meal prep usually consists of a big cook up on Saturday and Sunday and I’ll make extra portions to make sure that I’ve got some leftovers for the week. It’s pretty easy, you cook once, and have heaps of healthy meals for your lunches at work. If I don’t prep my meals on the weekend, I’m definitely susceptible to falling for the not so healthy options during the week. The below recipe is one of my favourites for meal prep as it’s easy, healthy and very delicious. 

These salmon sweet potato patties make a great lunchbox filler and will even entice the fussiest eaters. Make a big batch on the weekend and you’ll have a few snacks for later in the week. 

Sweet potato is a staple in my diet because I enjoy the taste and the nutritional value is more preferred in my diet compared to normal potatoes. Salmon and tuna (yes you can also make this recipe with tinned tuna instead of salmon) are also frequent in my diet because of the high-protein contents one tin of salmon gives you 15 g of protein and only 1.3 grams of fat. 

Simple Shopping Tip

When buying tinned fish make sure you choose the one in spring water because the ones kept in olive oil are higher in fat and contain up to 11 g of fat per serving. 

You can get as creative with this recipe as you want and you can serve it with a nice fresh salad or steamed greens. Here’s the basic recipe.

Healthy Salmon Sweet Potato Pattie Recipe

Ingredients:

SALMON PATTIE Ingredients:

  • 1 Large Sweet Potato (peeled and chopped)

  • 1 Large Tin of Salmon in springwater

  • 2 Whole Eggs

  • Breadcrumbs

Dill & Yoghurt Sauce

Simply mix some low fat greek yoghurt with chopped up dill and some salt and pepper and yummmm!!!

If you like you can add some finely chopped up gherkins to your sauce to give it some extra zing.

Method

To save you time, simply chop your RAW sweet potato into even chunks, then blend in your ninja blender till it’s shredded.
Add your shredded sweet potato to a bowl
Mix in your salmon (or tuna) and add whole eggs. Mix together witha spoon.
Shape your mixture into patties and firmly press ingredients together to make even shapes (I used an old protein powder scoop to make even patties but you can use a spoon or a measuring cup).
Coat your patties with breadcrumbs and fry in a pan on medium heat till golden brown on both sides.
Yummm… serve with fresh dill sauce and some gherkins on the side

Ingredients

  • 1 Large Raw Sweet Potato (Peeled and in chunks)

  • 1 Large Tin Of Salmon

  • 2 Whole Eggs

  • Breadcrumbs

  • Seasoning, salt and pepper optional

  • Dill & Yoghurt Sauce
  • Low fat greek yoghurt

  • Fresh dill (chopped up)

  • Lemon juist , salt and pepper to taste

  • Optional add finely chopped up gherkins into your sauce

Directions
