Oats are full of goodness and are just a fantastic start of your day. Oats are considered one of the healthiest foods as they are shown to reduce cholesterol, reduce the risk of cardiovascular disease, stabilise blood sugar, and are a great source of fiber.
The original recipe was found in a runners magazine but can be made in many variations. Bake them in a big batch and you’ll have breakfast for the week!
I had the ricotta oat patties this morning and trust me, it makes a great breakfast!!!! Low fat, 3 grams of fibre and high protein. Have some fruit on the side and this makes a complete breakfast!!!
Ricotta Oat Breakfast Patties Ingredients:
- 1/4 cup quick oats
- 1/4 cup ricotta cheese
- 2 egg whites, large
If you feel like jazzing it up try adding any of the below:
- 1 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
Ricotta Oat Breakfast Patties Method:
- Put all ingredients in small blender cup and process for 30 seconds (you can also just mix it up in a bowl with a spoon).
- Spray medium frying pan with cooking spray or coconut oil and heat on med-high (make sure the pan doesn’t get too hot as the patties will burn easily – if you can’t seem to get them fully done, simply put a lid on top of your pan).
- Dollop mixture into pan making 3 pancakes.
- When edges of pancakes start to dry turn and cook until brown. Serve with sugar free maple syrup, jam, cheese or fruits. Enjoy!
Ricotta Oat Breakfast Patties Variations:
- Add some desiccated coconut to the batter.
- Add manuka honey to the batter for a sweet breakfast.
- Top with freshly made berry sauce.
- Top with fresh salad and tuna for lunch.
- Top with banana and honey.
- Add chia seeds.
- Top with nuts / seeds .
- Add banana and a dollop of fresh yoghurt.
